Working with Yeast
One of the things I learned in culinary school is how to work with yeast. Some may think that yeast is a tricky beast but its as simple as this- Yeast likes warm liquids. not hot, not cold- warm. So what is warm? If you don't have a thermometer readily available, the best way to tell if you have the right temperature water is if the water is the same temperature as your finger (Do you feel like you need to go to the bathroom? yeah? then thats the right temperature). The reward for taking this careful step? When we were in "Italy", we made donuts- light fluffy balls of dough with golden sweet raisins in it. Here, I served " coffee and donuts" - Coffee creme anglais, vanilla creme anglais and some whip cream!
